Winter Savoury Ratios

On 10 August 2008, I harvested 674.5g of Winter Savoury. This represented 519.8g of leaves and 154.7g of stems (I separated them for the purpose of measurement, but I do not recommend this procedure in general since plant essence is lost as a result). In other words, we have approximately 77% leaves and 23% stems.

I left this material in the open air for drying.

On 26 August 2008, I found the leaves to have reduced to 130.6g, and the stems to 74.5g. In other words, the leaves were reduced by ca. 4:1, and the stems by 1.75:1.
